Cheesy Vegetables and Beef
- 4 beets
- 4 large potatoes
- 1 large head cauliflower
- Whatever leaves are good from the 4 beets (optional)
- 2 lbs. ground beef
- 2 cups cubed pepper jack cheese
- 2 Tablespoons Taco Seasoning
- ¼ cup water
Place about 4 inches of water in the bottom part of a big steamer, and place over high heat.
Wash or peel beets and potatoes. Cut them into bite size cubes and place in top of big steamer. Place top of steamer over boiling water in bottom part, and place lid on top.
Put beef, water, and Taco Seasoning into skillet and chop fine while browning.
While meat is cooking, cut cauliflower into bite size florets and add to potatoes and beets.
Pick the best beet greens and slice thinly.
Cut the cheese into cubes and set aside.
When the vegetables are tender, add the beet greens and cook for 5 more minutes. Then remove from heat.
When meat is done, mix in vegetables and cheese.
Let sit for 5 minutes, or until cheese melts. Mix slightly and serve.
Variations:
- Use carrots, squash, turnips, or whatever vegetable you have on hand.
- Try Parmesan cheese or cheddar instead of pepper jack.
- Try Susanna’s Savory Seasoning instead of Taco Seasoning.
- Try pork or chicken instead of beef.
