Carrot Cake

  • 4 cups flour
  • 2 tsp salt
  • 2 tsp baking soda
  • 2 tsp cinnamon

Mix then add:

  • ½ cup oil
  • 2 tablespoons vinegar
  • 2 cups milk
  • 1 cup honey (or 2 if you like it sweeter)
  • 4 eggs

Mix, then add:

  • 4 cups shredded carrots
  • 2 cups raisins

 

Mix again, then pour into greased 9”x13” baking dish. Bake for 1 hour, or until knife comes out clean.

If desired, let cool then frost with cream cheese frosting. Or, you can serve hot or cold and top each piece with a generous spoon of sweet yogurt topping as you serve it. It is also good served hot with butter on top.
